Kodiak Cakes

I love muffins and I love pancakes. I also like trying to find healthier alternative to things that I probably shouldn't be eating all too often - such as muffins and pancakes. I'm also a big fan of convenience. I also like to be able to try out products from newer companies any time I get the chance. If I like a product, I love being able to spread the word and hopefully help a small growing company out.


I somehow came across a product called "minute muffins" by Kodiak Cakes. My assumption was that somehow you were able to make these muffins in a minute perhaps? Or maybe just a few minutes? As I looked into it a little more I realized that the company uses natural ingredients and whole grains. And I was right, you add water and your muffin is ready in one minute! This is awesome if you're in a hurry.

I was given 4 flavors of the minute muffins and a box of waffle/flapjack mix to review. I knew I wanted to try the chocolate muffin first. I figured that I would give the blueberry one to my boyfriend to try out since I'm usually not a fan of blueberry muffins. 

A few days went by and I honestly didn't have room for a muffin in my day. (I have been trying to eat healthier and even though these were muffins with whole grains and natural ingredients I was trying to follow a certain regimen). Then one weekend I had a half marathon on a Sunday. The night prior I really didn't eat any carbs like I normally would and when Sunday morning came I feared that I would not do too well during the race. I was in a bit of a rush and I wondered what I could possibly eat before the race. I saw the Minute Muffins and wondered if I should take the chance. You aren't supposed to eat a new food on a race day, but I didn't do anything else I was "supposed" to do, so I figured...why not?


I popped the muffin in the microwave right before I was heading out the door, grabbed a fork and got in the car. The muffin was surprisingly good, and every once in a while I could taste a yummy chocolate chip. I also happened to do better that race than the past two I had done. Maybe the minute muffins have mystical powers? 


Adam also decided to get in on trying out the muffins. He had the blueberry first. He liked the muffin. His only complaint was about this plastic-wrap type stuff lining the container. I assume it's there for a reason, but maybe the packaging could be updated somehow to be more user friendly while eating?


Then it was time to try the pancakes. Normally Adam does most of the cooking. It's not that I can't cook, it's just that he's a lot better at it than me. One morning I decided to surprise him and let him sleep in while I tried to make the Kodiak Cakes pancakes. I didn't realize just how EASY it was going to be. All you had to do was add water to the mix. So, in actuality, I wasn't really doing anything special. But the pancakes came out tasting good and we got to have a healthy, satisfying breakfast together.

I haven't tried the other flavors of muffins yet, but I'm looking forward to it! The company also makes cookies, brownies, and syrups.
